Cinnamon Inspirations

I love everything flavoured with cinnamon, especially during fall and winter. And since Christmas is approaching, and this spice is THE number one Christmas spice, I thought I'd give you some Cinnamon Inspiration from the blog world.


If you love Cinnamion Rolls but doesn't have the time or want to put in the effort of making a yeast based dough, this is a great option Cinnamon Roll Coffee Cake with Cream Cheese Glaze from Averie Cooks.

Chocolate and Toffee Thumprint Cookies



These cookies are insanely easy to make and absolutely to die for! They are a favourite of mine and I easily can eat way to many! They store well for a week or so in an airtight container...if they last that long at your place...


Chocolate and Toffee Thumbprint Cookies, makes about 20
4 1/2dl flour (450ml)
1dl sugar (100ml)
1tsp baking-powder
2tsp vanilla sugar
200 grams butter, room temperature
Chocolate and Toffee candy

Place all dry ingredients in a bowl, add the diced butter and work quickly to a smooth dough. Do not overwork it. It's easiest to use a food processor or a stand mixer but you can use your hands too.

Preheat the oven to 200 degrees C.

Divide the dough into 20 pieces. Roll each piece into a small boll and place in paper cups. Use your thumb to press a deepening in each cookie. Fill it with chocolate and toffee candy.

Bake your cookies for 10-15 minutes. Don't let the cookies colour too much.

Fall Flavoured Cookies and BLOGHOP



Fall has definitely arrived to Sweden and I've been super busy at work which is why I haven't been blogging as much as I'd like to. Cookies are quick and easy to bake and what is more suitable than some Fall Flavoured Cookies? Not only do I love the flavours of cinnamon and ginger but spiced baked goods smells oh soooo wonderful!

Fall Flavoured Cookies, makes 24
125 grams butter, room-temperature
2 1/2 dl brown sugar (200ml)
1/2 dl light molasses (50ml) (I used golden syrup and the cookies were still great)
1 egg
5 1/2 dl flour (550ml)
1 1/2 tsp bicarbonate
1 1/2 tsp powdered ginger
1/2 tsp powdered cinnamon

Decoration: sugar

Combine butter and sugar in a bowl into a smooth mixture. Add egg and molasses, I used golden syrup and the cookies turned out delicious, and combine. Combine the dry ingredients and add to the butter mixture. Work into a smooth dough. Place in the refrigerator for about 60 minutes.

Preheat the oven at 200 degrees C. Roll the dough into 24 small balls and roll them in sugar. Place the balls onto an oven papered baking plate. Bake in the oven for about 10-12 minutes. Let the cookies cool before serving.

Chocolate & Orange Sticky Cookies



Chocolate and orange is such a lovely combination! These little cookies are ready in no time, and you don't have to be an expert in baking for succeeding. These Chocolate & Orange Sticky Cookies are from now on on my Cookie Top List as they are super easy and highly appreciated! I also like the fact that they are a bit chewy....mmmmm! If you prefer them more crunchy, bake them for another minute or two.


Chocolate & Orange Sticky Cookies, 35-40 cookies
200 gram butter, room temperature
2 1/2 dl sugar (250ml)
1 tbsp corn syrup
1 1/2 tsp baking powder
1 tsp vanilla sugar
5 dl flour (500ml)
1 dl unsweetened cocoa (100ml)
zest from 1 orange




Preheat oven at 175 degrees C.

Place all ingredients in a bowl and combine. Divide the dough into 3 pieces and roll into long rolls and place on an oven paper covered baking plate. Flatten the rolls until about thick as your finger.

Bake for about 10-12 minutes. Let them cool somewhat before cutting them diagonally.

Soft Chewy Oatmeal and M&M Cookies



Cookie time! I've made a batch of soft, chewy Oatmeal and M&M Cookies. The trick is to get cookies out from the oven when they seem undercooked. That's what makes them soft and chewy, and not to mention, absolutely irresistible!





Oatmeal & M&M Cookies, 10 cookies
120g butter, softened
1dl (100ml) light brown sugar
1 egg
1 1/2 dl (150ml) flour
1/2 dl (50ml) rolled oats
1/2 tsp baking powder
1/4tsp salt

Decoration: M&M's or Non-Stop

Preheat oven at 180C and line a cookie sheet with baking parchment.

Place butter, brown sugar, eggs and in a bowl and mix with an electric mixer until smooth. Add flour, rolled oats, baking powder and salt, combine. Chill the dough in the fridge for 30 minutes before rolling. Roll into walnut sized portions. Flatten and decorate with M&M's. Bake for about 10 minutes. Longer if you want them more crunchy.

Foodporn: Icebox Candy Bars




This is pure food porn! I found this recipe and amazing pics at Cookies and Cups and I was drooling while reading her post and of course I HAD to share it with you. In theses Icebox Candy Bars you've got chocolate chip cookies, peanut butter, twix, kit kat AND Nestlé Crunch Bars. That's a hardcore Candy Bar! It's like eating four desserts at the same time:-) I encourage you to check out Cookies and Cups for more inspiring recipes.



Icebox Candy Bars
3 cups crushed crunchy chocolate chip cookies, such as Keebler or Chips Ahoy (approx 24 cookies)
1/2 cup powdered sugar
1 1/4 cup peanut butter
1 cup chopped Twix bars, approx 12 mini bars
1 cup chopped Kit Kat (3/4" pieces) about 8 snack size packs.
1 (11.5 oz) bag of mini Nestle Crunch Bars

  1. Line a 9x9 pan with aluminum foil and grease lightly with butter
  2. Crush your chocolate chip cookies in the food processor or in a ziplock bag until they are a fine crumb.
  3. Mix in your powdered sugar with the cookie crumbs.
  4. In a microwave safe bowl melt peanut butter for 1 minute. Stir.
  5. Pour peanut butter over your cookie crumbs and stir until evenly coated.
  6. Set aside to cool for approx 10 minutes.
  7. Meanwhile chop your Twix and Kit Kat bars. When mixture is cooled, fold in your chopped candy bars.
  8. Dump this mixture into your prepared pan and spread evenly. Refrigerate this until set, about 30 minutes.
  9. When chilled, place unwrapped Nestle Crunch bars into a microwave safe bowl and heat for 30 seconds. Remove and stir. If not melted continue heating in 15 second increments until chocolate is melted.
  10. Remove pan from fridge and pour melted Nestle Crunch bars on top, spreading evenly.
  11. Place back in refrigerator for 20-30 more minutes until top layer is set.
  12. Remove from fridge, and let sit for 10 minutes at room temperature before slicing into squares or bars.

Brownie Cookies with Peanut Butter Frosting




WOW! Rich, dark chocolate, chewie, brownie cookies smooshed together with sweet and salty peanut butter frosting!! This must be one of the most delicious and utterly happy marriages ever! They are insanely good and the ultimate cookie for every chocolate and peanut butter lover!  Another great thing, it's actually quite simple to make these babies.





Brownie Cookies with Peanut Butter Frosting, makes 12
350g dark chocolate, chopped
40g butter
2 eggs
2/3 cups (150g) caster sugar
1 tsp vanilla extract
1/4 cup (35g)  plain flour, sifted
1/4 tsp baking powder, sifted

Peanut Butter Frosting:
1 cup (160g) icing sugar
1 cup (280g) smooth peanut butter
80g butter
1 tsp vanilla extract


Preheat oven at 180 degrees C. Place 200g of chocolate and the butter in a small saucepan over low heat and stir until melted and smooth. Set aside. Place eggs, sugar and vanilla extract in a bowl and mix for about 15 minutes or until pale and creamy. Stir through the flour, baking powder, chocolate mixture and the remaining chocolate and allow to stand for 10 minutes. Spoon tablespoon's of the mixture, at a time, onto baking trays lined with non-stick baking paper. Bake for 8-10 minutes or until puffed and cracked. Allow to cool completely on trays.

To make peanut butter frosting, place sugar, peanut butter, butter and vanilla extract in a bowl and mix for about 5 minutes or until light and fluffy. Add the cream and mix for another 2 minutes. Spread half the cookies with peanut butter frosting and sandwich with the remaining cookies.

Strawberry Cookie Ice-Cream




OMG! I'm in ice-cream heaven! This is so far the best ice-cream I've made! Imagine a smooth vanilla bean ice-cream, mixed with fresh sweet strawberries and add some crunchieniess from the cinnamon cookies. Yummie! I love making my own ice-cream, there are so many options, and it's supereasy. What's not to like:-)





Strawberry and Cookie Ice-Cream
4 egg yolks
3/4 dl sugar (75ml)
1 vanilla pod
3 1/2 dl whipping cream (350ml)

6 cookies of your choise (I used a cinnamon flavoured cookie), make crumbs

Strawberry Sauce:
2 dl fresh strawberries (200ml)
2 tbsp sugar

Mix strawberries and combine with sugar. Set aside.

Mix egg yolks and sugar in a bowl until sugar dissolves and the mixture is creamy and fluffy. In a separate bowl, add whipping cream and vanilla seeds. Whip until fluffy. Combine both mixtures carefully.  Pour the mixture in your ice-cream maker and follow instructions according to your brand. 

When ice cream is chilled, scoop half the ice-cream into a dish, next pour half the strawberry sauce and sprinkle cookie crumbs on the ice-cream. Repeat this once more. Run a spoon through the mixture, so the layers get mixed. Place back in the freezer and allow to chill completely. (If you don’t have an ice-cream maker, pour the mixture in a plastic container and let it freeze for a couple of hours. Stir occasionally to minimize the amount of ice particles.)

Peanut Butter Cookies



These cookies are yummie! It's both peanut butter and salted peanuts in them which makes them chewy, crunchy, sweet and salty at the same time. The recipe yields 40 cookies, but I'm sure they wont last long anyway...





Peanut Butter Cookies, 40
200 grams butter, room temperature
1 1/2 dl brown sugar (150ml)
1 1/2 dl sugar (150ml)
1 tsp vanilla sugar
1 egg
1 pinch of salt
1 dl peanut butter (100ml)
5 dl flour (500ml)
1 tsp baking powder
1 dl chopped peanuts (100ml) (I used salted peanuts)

Decoration: peanuts

Pre-heat oven at 200 degrees C.

Combine butter, sugar, brown sugar and vanilla sugar. Stir in egg and salt. Add peanut butter and stir. Combine flour and baking powder in a separate bowl and stir into the mixture. Add chopped peanuts and stir again.

Form balls of the dough, flatten them a little bit and decorate with peanuts. Place on an oven papered baking plate. Bake for about 10-12 minutes. Let them cool.

First up is a very summery Strawberry and Cheese French Toast made by Jennifer at Peanut Butter and Peppers. I am a big fan of her blog and always feel inspired when browsing around her blog and drooling all over her delicious recipes. I recommend you to check out her blog and her amazing weight loss story. This Strawberry and Cheese French Toast must be the perfect start on a lazy summer weekend.





My next favourite also include strawberries in the recipe, it must be THE summer fruit all times, strawberries are so delicious, and sweet and colourful. Ambreen from blog Simply Sweet n Savory linked up these lovely and yummy looking Strawberry Jam Ring Cookies. Buttery cookies, sandwiched together with strawberry jam and dusted with icing sugar. I love cookies with jam so this is definitely a must try.




I LOVE MANGO! Which means that this Mango Lime Tart from blogger Julie at White Lights on Wednesday had to be in my top three favourites. It sounds absolutely fantastic! make sure to stop by her blog to be inspired for more amazing treats.
