Pancake Cake, 10 pancakes
1 l milk
5 dl flour
1/2 tsp salt
1 tbs butter
Topping and Filling
5-6 dl double cream
300 g strawberry jam
200 g strawberries
Whisk the eggs, half the milk and salt. Add the flour and whisk into a smooth batter. Add the rest of the milk and the butter and blend well.
Heat a frying pan and add a small dollop of butter. When the butter has turned golden, pour a cup of batter into the pan, tilt the pan to spread the batter evenly. Cook 2-3 minutes until golden on a medium heat, each side. Repeat until you have used all the batter. Set the pancakes aside to cool.
Whip the cream. Get your favourite jam and berries. And now it's time to build the cake.
Start with one pancake. Spread a mixture of whipped cream and jam on top of it and then add the next pancake. Repeat until all your pancakes have a filling in between the layers. On your top pancake only add whipped cream and decorate with your berries.
