Chocolate and Orange Fudge



It was such a long time ago I made Chocolate Fudge, so when I found this recipe in a magazine I couldn't resist making it because it sounded so wonderfully delicious. I added more chocolate as I wanted it to be a rich and very chocolaty fudge. I also added grated orange to give it a little bit freshness to all that rich chocolate flavour.  They turned out amazingly good:-)

Chocolate and Orange Fudge
50 grams butter
1 dl golden syrup (100ml)
3 dl sugar (300ml)
3 dl double cream (300ml)
3 tbsp un-sweetened cocoa powder (I used 5-6 tbsp...add a little bit in a time, and taste)
1 orange, both juice and zest

Peel the orange. Combine butter, syrup, sugar, cream and cocoa powder in a large non-stick saucepan and bring to boil.

Add juice and half of the orange zest and continue to boil the mixture until it reaches 125 degrees C. Or do a "ball test" (pour a spoon of fudge into a cold glass of water, to see if you can roll it into a ball).

When the ball test works, pour the fudge in a greased baking tin or an oven paper covered baking tin, about 20 x 20 cm. Sprinkle the remaining zest onto the chocolate fudge before it gets stiff.

Cut the yummie Chocolate and Orange Fudge into bite sized pieces using a scissor or knife.
