Quick Apple Cake

If you have very little time but still crave a warm homemade Apple Cake, this recipe is a great choice. You whisk it up in no time and serve with a good quality vanilla ice-cream just moments later. As a bonus your home will be filled with the lovely, spicy scent of cinnamon.





I love cinnamon and especially in an apple cake, so I most likely used a lot more cinnamon than the recipe requires as I roughly sprinkled cinnamon and sugar on top until the cake turned dark brown:-)




Quick Apple Cake,  10 slices
4 dl flour (400ml)
2 tsp baking powder
1 dl sugar (100ml)
1 tsp cardamom powder
75 grams butter, room-temperature
2 dl milk, 3% (200ml)

Filling:
3 apples
1 tbsp sugar
1 tsp cinnamon powder

Pre-heat the oven to 200 degrees C.

Combine flour, baking powder, sugar, cardamom powder in a bowl.

Add the butter and pinch it with your fingertips until you have a grainy substance. Add milk and stir into a batter.

Butter and flour a spring-form, about 24 cm in diameter. Pour the batter into the tin.

Peel and slice the apples. Place them onto the batter, in a circle around the tin and a smaller circle in the middle. Sprinkle cinnamon and sugar on top.

Bake in the middle of the oven for about 20-30 minutes. Pinch the cake with a tooth pick, if it comes out clean, your apple cake is ready.

Serve with vanilla ice-cream, vanilla custard or whipped cream.
