Chocolate and Raisin Shortbread Cookies



I'm a big fan of shortbread cookies, they are easy to make and taste divine. The light texture makes them almost melt in the mouth. These once are studded with dark chocolate and raisins.


Chocolate and Raisin Shortbread Cookies, 45pcs
100 grams butter, room temperature
1 dl sugar
1 egg
3/4 dl raisins
50 g dark chocolate
3 dl flour
1/2  baking-powder


Preheat oven to 175 degrees C.

Mix butter and sugar well. Add egg, finely chopped dark chocolate and raisins and combine. Combine flour and baking-powder and add to the mixture. Place small dollops of mixture onto an oven-papered covered baking plate. Bake for about 12 minutes. They should not get much colour.
