OMG!!! This must be the best cookies I've ever tried!! The recipe is from Martha Stewart and it's absolutely amazing.
Best is to use fresh strawberries, I used frozen once as I had some from last summer in my freezer, and there's nothing wrong with the taste what so ever. But I think they might turn out a bit prettier if I'd made them with fresh strawberries. Next time:-) The cookie dough turned out a bit pinkish as the strawberries were very moist.
Strawberry Shortcake cookies, about 20
12 oz strawberries, hulled and diced
1 tsp lemon juice
1/2 cup + 1 tbsp sugar
2 cups flour
2 tsp baking powder
1/2 tsp salt
6 tbsp butter, cold and cubed
2/3 cup heavy cream
sanding sugar
Preheat the oven to 375 degrees F. (19 C.)
Combine strawberries, lemon juice and 2 tbsp of sugar. Set aside. Whisk flour, baking powder, salt and remaining 7 tbsp of sugar. Cut in butter until coarse crumbs. Stir in the cream until the dough start come together and then stir in strawberry mixture.
Scoop out onto a prepared baking sheet. Sprinkle with sanding sugar and bake for about 25 minutes, until golden.
Best served immediately but can be stored in an airtight container in room temperature for up to 1 day.
